Using coated dates, the kind that are easier to snack on because they do not stick together, is not recommended.

I suggest using raw dates that are sticky.

  • If your almonds have not been chopped, chop them up. Then place them in a shallow bowl and set the bowl aside while you work. Also, place a piece of parchment paper on a plate or on the bottom of a container that can be used to store your energy balls.
  • Place your dates in a food processor (or strong blender) and process until a date forms. You can add up to a tablespoon of warm water if needed if the dates are dry.
  • Once you have a paste you can add the almond flour and coconut. Pulse your mixture until it well combined. You should get a sticky paste from this.
  • This recipe should make ten balls. Use a large spoon or scoop so that you can scoop out the date paste that will be used for the first ball. Form a ball between your hands and then roll the ball in the chopped almonds to coat it. Place the energy ball on the parchment paper that you have laid out and repeat until all of the balls have been completed.
  • Refrigerate for about a half hour to set before serving.
