Now that Fall is in full swing, I’m all about baking. All the things. Muffins, Cookies, Pies – oh MY.

These yummy little muffins are awesome for popping into school lunch boxes. They’re great for having on the counter after school, or making on a Saturday morning for weekend snacking.

Just a couple of bowls, and you’ll get a dozen muffins to eat, or share. They smell amazing, so you might want to make a double batch and bring to friends or share with neighbors.

You could make minis muffins instead of full sized ones if you wanted to!

Easy to make, and loved by everyone. Hope you love them like we do!

Get prepped

Preheat the oven to 350 degrees F.

Sift the flour, baking powder and salt together.

Line a 12-hole muffin pan (muffin tin) with paper liners

Melt the butter and mix the sugar and cinnamon together for the topping

Make the muffin batter

In a stand mixer, or in a large bowl with handheld mixer, cream the butter and sugar until pale and creamy.

Beat in the eggs, one at a time.

Add applesauce and mix until well blended.

Into the wet ingredients fold in the sifted dry ingredients, until just combined.

Scoop and bake

Using a large cookie scoop, divide the batter evenly into the muffin cups.

Bake in the oven for 15 minutes. The tops should be golden brown and a toothpick inserted in the center should comes out clean.

Remove from the oven and cool 5 minutes.

Dip the muffins in cinnamon sugar

While the muffins are still warm. dip in melted butter and then in cinnamon sugar mixture.

Cool on wire racks, and devour.

This applesauce muffin recipe does well as mini muffins. Check your muffins in half the usual cooking time, as they’ll cook faster than full sized muffins.

What to do with leftovers

Line an airtight container with paper towels, and place your muffins inside in a single layer. Place the lid on and seal. These muffins will keep for a few days.

Substitutions/Additions

You can opt to use have all purpose flour and half whole wheat flour if you wish.

Add a little Pumpkin Pie Spice to your muffins for an extra kick of Fall flavor!

  • Trail Mix Muffins. Make these fun trail mix muffins for a boost in lunchboxes, or make them for yourself! Fluffy muffins with fruit and nuts – irresistible!
  • Blueberry Crumb Muffins. Not your average muffin, these streusel muffins take it up a notch with a sweet streusel topping

    The flavor of the muffins is soo good! They did seem a little dry to me though next time I’ll add 2 table spoons of yogurt to help with the texture and dryness.
