Kothavarangai thoran is a delicious poriyal made with cluster beans. The freshly ground coconut, red chili and cumin seeds adds more flavor to the poriyal. This poriyal can be served with any South Indian Main Courses or even as a dry curry with Roti!

Kothavarangai Thoran is a Kerala way of making Cluster beans Poriyal. In Tamilnadu, for making poriyal, we start with finely chopping the veggies, then proceed with tempering. After tempering, we toss the chopped veggies, cover and cook it along with salt and once the veggie is cooked, we add fresh grated coconut and serve with Main Courses. Kerala Thoran are rich in coconut. For most of the thoran, fresh coconut, red chili and cumin are crushed and added to cooked vegetable. This way of crushing coconut with red chili and cumin gives a wonderful flavor to the poriyal.
Tips for making Kothavarangai Thoran | Cluster Beans Poriyal:
- Finely chop the cluster beans that will help the beans to cook faster
- If you plan to steam cook in a pressure cooker or steamer, add pinch of turmeric and required salt to the cluster beans and cook. If you are planning to cook in open pan, first cook the cluster beans till its 80% done and then add salt
- Add generous amount of coconut while crushing or grinding
- If you use a mixer to grind the coconut, do not add water
- Add the crushed coconut only after all the water in the cooked cluster beans has evaporated

Ingredients
- 350 gms Cluster Beans
- ¼ tsp Turmeric Powder
- 1 tsp Salt
For Grinding
- 2 tbsp Grated Coconut
- 1 Red Chili
- ½ tsp Cumin Seeds
For Tempering
- 1 tbsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Split Urad Dal
- 1 Red Chili
- Few Curry Leaves
Instructions
Wash and finely chop the cluster beans
Take the cluster beans in a vessel and add turmeric powder and salt and add 1/2 cup of water and pressure cook it allowing for 2-3 whistles.
Meanwhile, take the grinding ingredients in a mixer and grind it to a powder without adding any water
Take the cooked cluster beans and drain any excess water and set it aside. Heat oil in a pan and add mustard seeds. When the mustard seeds starts to sputter, add urid dal and fry till it turns golden brown color. Then add broken curry leaves and red chilli and fry for couple of seconds
Then add cooked cluster beans and give a good mix. Then add the ground spice powder to the pan. Adjust the salt if needed
Give everything a good mix and switch off the flame. Take the thuvaran in a serving bowl.
The yummy Kothavarangai Thuvaran is now ready to serve!

We can cook Kothavarangai over the pan also but sometimes it takes more time thats why I steam cooked in pressure cooker
