To say my keto personal chef clients were overjoyed when I made this chaffle with almond flour recipe for them for the first time is an understatement. Breads like my Irish soda bread, banana bread muffins, blueberry scones, and pumpkin streusel mini loaves is something they have been craving.

My clients requested a keto breakfast sandwich. These crispy and flavorful cheesy cheddar chaffles are the perfect bread of the sandwiches. I added cooked breakfast sausage for their heat and eat breakfast. A couple slices of your favorite cheese and a fried or scramble egg are delicious additions too.

substitutions and additions

  • This savory chaffle has cheese as the main ingredient. Any type of cheese can be used in the chaffle recipe. More complex and sharp cheeses such as cheddar, Parmesan, and Asiago make for intensely flavored chaffles ~ perfect for sausage and egg breakfast sandwiches. More mild cheeses like mozzarella, Monterey jack and Havarti are excellent options too.
  • In place of the 3 tablespoons of egg whites, 1 beaten large egg can be used.

what waffle maker to use to make chaffles

This mini waffle maker is perfect for making chaffles. It makes a single waffle and is ideal for small kitchens, singles and couples. If you want to make more waffles all at the same time, this multi mini waffle maker is the one to buy. It makes up to 4 waffles at once. Both waffle makers are nonstick so they a easy to clean with warm water.

how to make chaffles

Heat a mini waffle maker. In a small bowl, mix together the finely shredded cheese, egg whites, almond flour and baking powder. Add about 1/2 of the batter to the hot waffle maker. Close the top and cook for 3 1/2 to 4 minutes.

The chaffles are ready when they are crispy and golden brown.

can chaffles be made in advance?

Yes! Double, triple, quadruple the recipe.

To make the chaffle recipe ahead of time, cook the chaffles and let completely cool on a cooling rack. Store in a resealable bag removing as much air as possible. Store in the refrigerator for 2 to 3 days. Or store in the freezer for about 7 to 10 days.

To reheat, just warm and crisp the chaffle in a toaster. As all toasters heat and brown at different levels, it's best to experiment with a lower setting to achieve a crispy and hot chaffle.

suggestions and recipe tips

  • Make sure to preheat the waffle iron for at least 5 minutes.
  • The mini waffle maker and multi waffle maker are both nonstick. I have never had a problem with chaffles sticking. But if you want to make extra certain the chaffles slide out, lightly coat the waffle iron with cooking spray.
  • For a crispier less eggy waffle, make the chaffles with egg whites. Purchase egg whites in pint or quart containers from the grocery store.
  • The waffle will steam when they first start cooking. When the steam stops after 3 1/2 to 4 minutes the waffles will be crispy and golden brown.
  • Cool chaffles on a cooling rack so they stay crispy.

Description

The chaffle (cheese + waffle) is a low carb, keto friendly, gluten free and savory bread alternative.

Ingredients

UnitsScale

  • 3 tablespoons egg whites or 1 large egg beaten
  • 1/2 cup finely shredded sharp cheddar cheese
  • 2 tablespoons almond flour
  • 1/8 teaspoon baking powder

Instructions

  1. Heat a mini waffle maker or a multi mini waffle maker for 5 minutes.
  2. To make the chaffle batter, in a small bowl combine the egg whites, cheddar cheese, almond flour and baking powder. Stir to combine.
  3. Put 1/2 of the batter to the heated waffle maker and close the lid.
  4. Cook the chaffle for 3 1/2 to 4 minutes. Remove the chaffle to a cooling rack.
  5. Add the remaining batter to the waffle maker and cook the chaffle.
  6. To make sausage breakfast sandwiches, place a cooked sausage patty between two warm chaffles. You can also add fried and scrambled eggs and slices of cheese.

Notes

  • Make sure to preheat the waffle iron for at least 5 minutes.
  • The mini waffle maker and multi waffle maker are both nonstick. I have never had a problem with chaffles sticking. But if you want to make extra certain the chaffles slide out, lightly coat the waffle iron with cooking spray.
  • Some chaffle recipes use whole egg. I prefer chaffles made with egg whites. Using only egg whites makes for crispier and less eggy chaffles.
